Low Carb (keto friendly) Cucumber Salad
Happy Wellness Month!! This low carb and keto friendly cucumber salad is a favorite at our house! I hope your gardens are abundant with cucumbers this Summer, but if not, head to your local farmers market or farm stand to make this easy, delicious, healthy (and kid approved!) cucumber salad.
You will need:
1 large cucumber
1/4 of a large onion (red will work too)
5 tbsp sour cream
1 1/2 tbsp vinegar
2-3 tsp FRESH dill (fresh is important here)
1 1/4 tsp monk fruit sweetener
Salt and pepper to taste
Chop cucumber and onion and set aside in a bowl. Mix all other ingredients in a separate bowl until well combined. Add in the cucumber and onion and stir to coat. Refrigerate for at least two hours and VOILA! Delish...that's healthy!
